First Bite

A weekly guide to home food makers in downtown Las Vegas — reported, tasted, and filed.

What First Bite Is

First Bite is a free weekly guide to downtown Las Vegas home food makers — a short Friday menu with a link straight to each maker. We sell nothing, take no orders, deliver nothing, and never print a home address.

What First Bite is — the full details
We don't sell food We don't take orders We don't deliver We never print a home address — pickup is neighborhood only
  • Every Friday we publish a short menu — a small, curated list of dishes. We write about the makers and their food — that's it.
  • Makers submit during the week; submissions close Thursday at 3:00 PM.
  • Each menu is small on purpose: a maximum of 12 dishes per week, no more than 2 per maker — so every listing gets real attention.
  • Every listing is labeled cottage (Nevada cottage food covers non-potentially-hazardous foods only) or licensed kitchen.
  • When something catches your eye, the listing links you directly to the maker, and you arrange pickup with them, in their neighborhood.
  • Listings are free for makers, and always will be during the launch period. Photos, prices, and order details are only published with a maker's dated written okay, and anything can come down within a day on request — no questions.

First Bite is an editorial guide. Inclusion is curated, listings are informational, and any purchase a reader makes is made directly with the maker, outside First Bite. Food categories follow Nevada cottage food rules: cottage listings cover non-potentially-hazardous foods only; items that need heating or refrigeration appear only from licensed kitchens.

Home Food Is About to Change in Nevada. We Asked the Health District How to Keep It Safe.

By First Bite · Filed under Food Safety / Cottage Rules / 2027 Changes

LAS VEGAS — Nevada's cottage food rules change in July 2027: online and phone sales, mail and delivery fulfillment, and licensing through the Department of Agriculture. Before the first menu ran, First Bite invited the Southern Nevada Health District to be interviewed, on the record, about how the current rules prevent foodborne illness — and what changes when the new ones land.

“SNHD states…” — the interview will be quoted verbatim here, attributed and dated, once it takes place. — Southern Nevada Health District · Interview invited October 2026 · Piece follows launch

The Health District was invited to be interviewed for this article. When the piece runs, it lives permanently in the Archive; if the District later updates a statement, the update is appended, dated — the original is never silently rewritten.

The Critic's Desk

How we review

Reviews begin November 1, 2026

The Critic's Desk judges the meal — plainly, and in the open. When reviews begin on November 1, 2026, every review follows the same rules:

  • Three or more reviewers taste every dish.
  • Every score is published — shown as a range, never a single cherry-picked number.
  • A blind price-guess runs in every review: reviewers guess the price before they see it.
  • Disclosure labels on everything — purchased, provided free, or sponsored, stated up top.

Reviewers self-tag (home cook / chef / first-timer) so you can weigh the palate. Paid placement is always labeled — and it never buys a verdict.

For Makers — are you a home food maker downtown?

Listings are free — and the first step is a conversation, not a form.

What we list for free: your name, a link to your page, and a short neutral line about what you make. Photos, prices, and order details are only published with your written okay, and anything can come down within a day on request — no questions.

Remove my listing — for the owner of a listing

If a listing here is yours, you can take it down. No questions asked — you don't need a reason, and you don't have to explain. It comes down within a day: off the menu, off your maker page, off the index.

One thing we do check: the request has to come from the email or phone we have on file for that listing. That's how we know it's you asking, and not a stranger pulling someone else's listing. We never ask why.

Remove my listing →

When a listing comes down, the Archive keeps one dated line only — “Listing removed at the owner's request, [date]” — no listing content, photos, or details stay up.
